The Legendary Tiramisu

If you are a coffee aficionado, this luxurious classic cake checks all the boxes, and the best part is, it is super easy to prepare. Layer after layer, Tiramisu brings together the flavours of strong espresso coffee with the sweet decadence of Mascarpone cheese laced with aromatic liqueurs. The dessert originated in the northern Italian town of Treviso, Italy. Today, the coffee-flavoured dessert is recognized globally and has become a widespread admired dessert enjoyed at home and at the foodservice level in restaurants, cafés, bakeries, and supermarkets.

There are many variations and substitutions, but classics are best enjoyed in their original format. Keep the tradition alive with this classic recipe with a few twists:


Recipe

  • 1 package of Savoiardi Italian cookies (ladyfingers)

  • 1 package of small, heavy whipping cream (whipped)

  • 12 ounces of sugar

  • 4 egg whites

  • ½ teaspoon of pure vanilla or hazelnut extract (optional)

  • 12 cups of espresso

  • 1 tub (475g) of Mascarpone cheese

  • cocoa powder (for dusting)


  • Twist – crush chocolate bars and sprinkle over cake


Directions

  • Brew espresso coffee. Add a combination of liqueurs (coffee flavoured or enhancing liqueurs such as Grand Marnier, rum, or Bailey’s) and set aside in a bowl to bring to room temperature.

  • Beat egg whites with sugar until stiff - add vanilla extract if desired. Add mascarpone and whipping cream, mix by hand (do not beat with a blender).

  • Time to build the cake. Dip ladyfingers in coffee on both sides, quickly (do not over soak the cookies or they will be too soggy) and begin to layer in cake dish. Form a complete layer, then spread the mascarpone mixture over the cookies. Smooth it out evenly using a spatula or wooden spoon. Dust with cocoa powder over the mixture. Repeat steps to keep building and layering to the top.

  • Cover and refrigerate overnight.


Pro-Tip: Keep the eggs and mascarpone at room temperature before preparing and refrigerate overnight so the coffee can soak into the cake to heighten the palate.

Tiramisu is the perfect dessert to make ahead. Enjoy on its own or double your coffee intake and pair your piece with an espresso, latte, or cappuccino.
